3 Ingredient Banana Oatmeal Muffins

This 3 ingredient banana oatmeal muffins recipe requires no flour and no sugar, which makes the muffins a healthy on-the-go snack for toddlers, kids, and adults!

Ingredients

  • 4 bananas (extra ripe)
  • 3 cups oatmeal
  • 1 ½ teaspoons vanilla extract

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Spray a mini-muffin pan with non-stick cooking spray.
  • In a large mixing bowl, smash the bananas. Mix in the oats and the vanilla extract until well blended.
  • Add the mixture into the muffin tins, filling them to the top.
  • Bake for approximately 15-20 minutes.

Notes

  • Cook the muffins in a mini muffin pan. The muffins tend to be very dense so the smaller muffin size makes them easier to eat, especially if you are making the banana oatmeal muffins for your baby or toddler.
  • Spray the muffin pan with non-stick spray instead of using paper liners. The paper liners are hard to remove from the banana muffins. I find it easier to coat the muffin pan with non-stick spray instead.
  • You can fill the muffin cups to the very top. The muffins won't rise since there isn't an ingredient that encourages the muffins to rise (such as baking powder or baking soda).
