Cooking Aldi's corned beef brisket in an Instant Pot is one of the top preferred cooking methods. The pressure cooker method helps the corned beef brisket cook in a shorter amount of time compared to other methods while still creating a tender and flavorful meat.

Instructions
Trim off excess fat. Sprinkle the seasoning packet on to the meat and gently work the seasoning into the meat with your hands.
Insert the metal trivet into the Instant Pot, if available. Place the meat on the trivet in the pressure cooker/Instant Pot. Add 1 cup of water around the meat.
Secure the lid. Set the valve to "Sealing." Use the manual setting and set the time to 1 hour and 30 minutes.
Once the timed cycle is done, let the pressure naturally release.
Remove the meat, let rest for about 15 minutes, and slice into pieces against the grain. Serve with cooked vegetables such as carrots, onions, potatoes, and cabbage, if desired.
Notes
Trim off fat. The corned beef brisket usually has a side with a thick coating of fat. Either trim the excess fat off before cooking or after cooking before slicing the meat. If you keep the fat on during cooking, cook the meat with the fat side up.
Rinse: Before cooking, rinse the corned beef under cold water to remove excess salt.
Season: Use the spices included in the corned beef package for extra flavor. Gently rub the corned beef with the spices. It is not recommended to add any extra salt since the corned beef is already very salty.
Rest: Allow the cooked corned beef to rest for about 15-30 minutes before slicing to retain juices.
Slice Against the Grain: To ensure tenderness, slice the corned beef against the grain.
Serve with vegetables. Potatoes, carrots, and cabbage are traditional vegetables to serve with corned beef.
