Hash Brown Casserole with Corn Flakes

Also called "funeral potatoes", this cheesy potato casserole is an easy side dish for a large crowd. It is perfect for Thanksgiving, Christmas, Easter and gatherings.

Ingredients

  • 1 package (32 oz.) hash browns (thawed)
  • ½ cup butter (melted)
  • 1 can cream of chicken soup
  • 1 can cheddar cheese soup
  • 1 ½ cups sour cream
  • ½ cup finely chopped onion
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups corn flakes
  • ¼ cup butter (melted)

Instructions

  • Mix together the hash browns, melted butter, cream of chicken soup, cheddar cheese soup, sour cream, onion, salt and pepper.
  • Pour the potato mixture into a greased 9x13 pan.
  • Combine the corn flakes and additional melted butter. Sprinkle over the potato mixture.
  • Do not cover the casserole with foil. Bake at 350 °F for 45 minutes - 1 hour.
