1cupcottage cheese
1cupself-rising flour
Instructions
Preheat your oven to 375°F. Prepare a large baking sheet by lining it with parchment paper.
In a large mixing bowl, combine the cottage cheese and 1 cup of self-rising flour.
Stir the mixture with a spatula until all the flour is fully incorporated and a sticky dough forms.
While the dough is still in the bowl, use your hands to knead it a few times.
Gradually add 1 tablespoon of self-rising flour at a time. Add enough flour until the dough is no longer too sticky to work with. Do not over-knead the bread. Simply stir it in with the spatula until the dough reaches the desired consistency. You may have some leftover flour.
Divide the dough evenly into 6 pieces. Take one piece of dough and roll it between your palms a few times to create a compact ball. Place the dough ball onto the prepared baking sheet. Continue with the rest of the dough. Space the rolls about 2" apart.
Put the rolls into the oven and bake for approximately 20-25 minutes, or until the cottage cheese bread rolls are fully cooked. The rolls will be slightly golden on top.
Notes
The proper way to measure flour is to spoon it into a measuring cup rather than scooping it into a measuring cup. This ensures that too much flour isn't added to the recipe.
When combining the cottage cheese and flour, mix until just combined. Over-mixing can result in a tougher texture.
Always preheat your oven before baking the bread to ensure even cooking.
