AIP Smoothie with Strawberries and Bananas

This AIP smoothie with strawberries and bananas is an easy to make anti-inflammatory smoothie. Made without yogurt, it's smooth, creamy, and naturally sweet. This paleo, dairy-free, added sugar-free, and gluten-free smoothie is perfect for breakfast, a snack, or dessert.

Ingredients

  • ½ cup canned coconut milk (full fat)
  • ½ cup water
  • 1 frozen banana
  • 1 cup frozen sliced strawberries
  • 2 tablespoons collagen powder (omit for vegan option)
  • ½ teaspoon vanilla extract

Instructions

  • Add the coconut milk and water to the blender.
  • Add the frozen sliced strawberries, frozen banana, collagen (omit if vegan), and vanilla extract.
  • Blend until smooth and creamy.

Notes

  • Always start by adding liquid ingredients to the blender. This ensures optimal blending. If the smoothie is too thick, gradually add more water to achieve the desired consistency.
  • For an AIP-compliant vegan smoothie, leave out the collagen powder.
  • I prefer to use canned coconut milk since it makes a thicker base, but you can also use coconut milk from a container or carton. As noted above, always check the ingredients list to ensure the coconut milk doesn't contain any unnecessary ingredients.
