This AIP smoothie with strawberries and bananas is so easy to make, and it's one of my favorite AIP-compliant smoothies. Made without yogurt, it's both smooth and creamy, with a naturally sweet flavor from the fruit. This dairy-free, added sugar-free, and gluten-free smoothie can be enjoyed as part of a healthy diet for breakfast, a snack, or even dessert.
After being diagnosed with an autoimmune disease, I began looking for ways to incorporate anti-inflammatory foods into my diet. I started following the autoimmune protocol (AIP) diet to heal my gut and started eating more anti-inflammatory foods, like this smoothie, for breakfast.
This AIP smoothie recipe with strawberries and bananas is one of my favorite anti-inflammatory breakfasts or snacks.
I buy a bulk bag of frozen sliced strawberries from Sam's to keep in my freezer. You can purchase pre-frozen bananas, but the more economical choice is to freeze peeled bananas in a Ziploc bag—a perfect way to save overly ripe bananas!
Coconut milk is the base of this AIP smoothie, making it a great option for anyone following the AIP or paleo diet. Coconut milk is a dairy-free, AIP-compliant choice and provides a creamy, thick texture without the need for yogurt.
I try to purchase canned coconut milk with as few ingredients as possible. Ideally, the only ingredients would be coconut and water. Trader Joe's has the cleanest canned coconut milk I've found, as it contains no added ingredients.
The strawberries and banana blend together to create a smooth, creamy texture, ideal for a quick breakfast that fits perfectly into an anti-inflammatory diet. I even add a tablespoon or two of collagen peptides for the extra health benefits.
Ingredients
Here’s what you’ll need to make this easy and satisfying AIP smoothie for breakfast, a snack, or dessert:
- Coconut milk: I use full-fat canned coconut milk. Double-check the ingredients list to ensure it’s in its purest form.
- Frozen banana: The banana helps give the smoothie its smooth, creamy texture.
- Frozen strawberries: I always keep a bag of sliced frozen strawberries on hand.
- Collagen powder (optional): Collagen has many benefits, including support for skin, joints, hair, nails, gut health, muscle recovery, and bone strength. Omit for a vegan smoothie.
- Vanilla extract (optional): Adds a bit of extra flavor. Generally considered AIP-compliant if it’s pure and free of additives.
How to Make the AIP Smoothie
- Add the coconut milk and water to a blender.
- Toss in the frozen sliced strawberries, frozen banana, collagen, and vanilla extract (if using).
- Blend until smooth and creamy. Enjoy for breakfast, a snack, or dessert!
Tips & Tricks
Always start by adding liquid ingredients to the blender. This ensures optimal blending. If the smoothie is too thick, gradually add more water to achieve the desired consistency.
For an AIP-compliant vegan smoothie, leave out the collagen powder.
I prefer to use canned coconut milk since it makes a thicker base, but you can also use coconut milk from a container or carton. As noted above, always check the ingredients list to ensure the coconut milk doesn't contain any unnecessary ingredients.
