Welcome to Time for the Table! I'm Lauren, a Midwestern mom navigating the beautiful chaos of life with three rambunctious boys in Kansas. I share simple recipes that are centered around minimally processed whole foods, including AIP (Autoimmune Protocol) compliant, gluten-free, dairy-free, and Paleo options.
My journey into focusing on whole foods began after receiving autoimmune disease diagnoses in both 2021 and then again in 2024. After my second diagnosis, I wanted to understand why my body was triggering autoimmune responses.
I started reading everything I could about inflammation and autoimmune diseases. I realized my body had significant inflammation, which was triggering my autoimmune responses. I also learned that once you have one autoimmune disease, you're more likely to develop a second one unless you address the underlying inflammation in your body—something I wish my first doctor had told me!
This revelation opened my eyes to the powerful impact that diet and lifestyle choices can have on our health and our autoimmune responses. The standard American diet - filled with processed foods and artificial ingredients - creates an environment that fosters inflammation. Eventually, this inflammation can trigger an autoimmune response.
Eating whole, nutrient-dense foods—especially minimally-processed foods free from gluten and dairy—can significantly help prevent or manage autoimmune symptoms.
My personal journey made me realize how important a nutrient dense, whole-food focused diet is in reducing toxic load and inflammation. The recipes I share will fall into categories like Paleo, gluten-free, and dairy-free, which all emphasize whole foods and nourishing ingredients.
Through this blog, I’m excited to share simple, easy recipes that focus on whole foods. I want to make it easier for you to nourish your body! My goal is to help others on a similar journey by sharing what I’ve learned and offering support along the way.

Fun Facts About Me
- Some of my favorite things include: reading books about history, taking long walks outside, fixing up houses, writing and website publishing, and making homemade meals for my family.
- I've traveled to more than 23 countries across the world and have set foot on four continents. I've gone scuba diving between tectonic plates in Iceland, soared across waterfalls on the longest zip-line in Asia, and have seen the Sydney Opera house in Australia. My world travels slowed wayyyyy down after the birth of my first son in 2014. Honestly, my traveling days seem like a lifetime ago!
- Because of my extensive traveling, I've also been able to try a variety of foods. The craziest thing I've eaten is balut - a fertilized duck egg - in the Philippines and svið - a boiled sheeps head - in Iceland.
- Even though I've visited many different countries, the state of Kansas has always been my home. I've lived in both Wichita and the Kansas City metro area. My husband was born in Iowa and moved to Kansas when he was eight so our Midwestern roots are very strong.
- I grew up a die-hard Kansas State Wildcats fan, but life has a sense of humor. I actually graduated from the University of Kansas with a Bachelor's of Liberal Arts degree in Communication Studies. Who would have thought?
