Preheat the oven to 425 degrees Fahrenheit.
Peel the carrots. Cut off the tops of the carrots and cut into 3" pieces. Next, cut each piece in half horizontally to create a flat side.
Combine the olive oil, minced garlic, onion powder, paprika, chili powder, and Italian seasoning. Toss the carrots in the olive oil and spices mixture.
Place the freshly shredded parmesan cheese on a plate. Press the flat side of each carrot into the shredded parmesan cheese. The flat side of the carrot should be fully coated in parmesan cheese. Place each carrot piece flat-side down in a shallow baking pan.
Roast the carrots for approximately 15-20 minutes, or until the carrots can be easily pierced with a fork. Do not overcook the carrots or the parmesan cheese coating may start to burn.
