Make sure to wash all produce to remove any dirt or grime.
Dice the potatoes into ¼" cubes. Quarter the zucchini lengthwise then slice into ½" pieces. Cut carrots into ¼" round pieces. Slice onions and bell peppers.
The smoked beef sausage comes in a long link. Cut the sausage into ½" slices.
Line a baking sheet with aluminum foil or parchment paper (NOT wax paper). Add all of the vegetables and sausage to the pan. Drizzle the vegetables and smoked sausage with oil and seasoning.
This easy sheet pan dinner is ready when the vegetables are fork tender (approximately 30 minutes).
