All you have to do is line a baking sheet with aluminum foil or parchment paper, toss your vegetables and meat on top with a little olive oil and seasoning, and then bake. Sheet pan dinners are easy to clean up too!
One of my favorite healthy sheet pan dinner recipes is a Sheet Pan Smoked Beef Sausage and Roasted Vegetables. I add a lot of spring and summer vegetables to my sheet pan dinner to make it extra healthy.
My favorite vegetables to add are: broccoli, sliced onions, diced potatoes, diced carrots, quartered zucchini, and sliced bell peppers.

What I love about using precooked beef sausage in sheet pan dinners is the fact that I don't have to worry about whether the meat is cooked all the way through. I only have to make sure the vegetables are tender.
Benefits of Sheet Pan Dinners
Sheet pan dinners are easy to clean up, as I mentioned before. First of all, you only use one pan to cook the sheet pan meal.
You place foil or parchment paper on a baking sheet before adding your ingredients. Once the dinner is done, all you have to do is toss the aluminum foil and quickly rinse off your pan. Typically the foil or parchment paper prevents the healthy sheet pan dinner from sticking to the pan.
Usually sheet pan dinners require less prep time than other meals. I rinse the spring and summer vegetables off in water and slice or dice until the vegetables reach the appropriate size. I then slice the beef sausage into ¼-1/2 inch pieces. Next, I drizzle some olive oil, Ghee, or other oil on the vegetables and finally sprinkle salt, pepper, and other seasoning on top.

How to Make Sheet Pan Smoked Sausage & Roasted Vegetables
Sheet pan dinners are so easy to make! Here are the steps I use to make this healthy sheet pan dinner:
- Wash vegetables. Make sure to wash all produce to remove any dirt or grime.
- Slice and chop vegetables. Dice the potatoes into ¼" cubes. Quarter the zucchini lengthwise then slice into ½" pieces. Cut carrots into ¼" round pieces. Slice onions and bell peppers.
- Slice smoked sausage. The smoked sausage comes in a long link. Cut the sausage into ½" slices.
- Line baking sheet. Line a baking sheet with aluminum foil or parchment paper (NOT wax paper). Add all of the vegetables and sausage to the pan. Drizzle the vegetables and smoked sausage with oil and seasoning.
- Cook & serve. This easy sheet pan dinner is ready when the vegetables are fork tender.
